- Preheat oven to 425°F. Wash and halve fingerling potatoes lengthwise. Toss with 1 tbsp cooking oil, fry seasoning and 1 tsp salt. Spread on a baking sheet and roast for 20-25 minutes until golden and tender.
- While potatoes roast, cook bacon in a skillet over medium heat until crispy, about 6-8 minutes. Transfer to paper towels. Reserve 1 tbsp bacon fat in skillet.
- Slice onion into thin rings. Add to skillet with reserved bacon fat and cook over medium heat, stirring occasionally, until softened and caramelized, about 10 minutes. Stir in BBQ sauce and cook 1 minute more. Remove from heat.
- Form ground beef into 2 patties, season with remaining 1 tsp salt. In a separate skillet or grill pan over high heat, cook patties 3-4 minutes per side for medium. In the last minute, top each patty with a slice of Gouda and cover to melt.
- Slice brioche buns in half and toast cut-side down in a dry skillet or under broiler until lightly golden.
- Assemble burgers: spread a little BBQ caramelized onion on bottom bun, add patty with melted Gouda, top with bacon slices, a few pickle slices and more onions. Close with top bun.
- When potatoes are done, sprinkle pepper jack cheese over them and return to oven for 1-2 minutes until melted. Garnish with sliced scallions and a dollop of sour cream. Serve alongside burgers.
