Instructions

  1. Preheat oven to 425°F. Cut potatoes into ½-inch rounds. Toss with fry seasoning and 1 tsp oil. Spread on a baking sheet and roast until golden and tender, about 20-25 minutes, flipping halfway.
  2. While potatoes roast, thinly slice onion. Cook bacon in a skillet over medium heat until crispy, about 6-8 minutes. Transfer to paper towels. Pour off all but 1 tbsp drippings.
  3. In the same skillet, add sliced onion and cook over medium heat, stirring occasionally, until softened and lightly browned, about 8-10 minutes. Stir in BBQ sauce and 2 tbsp water; cook until thickened, 1-2 minutes. Remove from heat.
  4. Form ground beef into two ½-inch-thick patties. Season both sides with salt. Heat 1 tsp oil in a separate skillet over medium-high heat. Cook patties to desired doneness, about 3-4 minutes per side for medium. In the last minute, top each patty with a slice of gouda and cover to melt.
  5. Halve brioche buns and toast cut-side down in the skillet or oven until lightly golden, about 1-2 minutes.
  6. Assemble burgers: spread a thin layer of BBQ caramelized onions on bottom bun, add cheese-topped patty, then bacon slices and a few pickle slices. Close with top bun.
  7. When potato rounds are done, sprinkle with pepper jack cheese and return to oven for 1-2 minutes until melted. Dollop with sour cream and sprinkle with sliced scallions. Serve alongside burgers.
