Instructions

  1. Preheat oven to 425°F. Line a baking sheet with foil.
  2. Peel and dice sweet potatoes into 1/2-inch cubes. Toss with 1 tsp oil, brown sugar, salt and pepper. Spread on one side of the baking sheet.
  3. Roast sweet potatoes for 20-25 minutes until tender and caramelized.
  4. While potatoes roast, trim green beans and mince garlic. Thinly slice scallions.
  5. Pat pork chops dry and season with salt and pepper.
  6. Heat 2 tsp oil in a large skillet over medium-high heat. Sear pork chops for 3-4 minutes per side until golden brown. Remove from skillet.
  7. Reduce heat to medium. Add butter, garlic and green beans to the skillet. Cook, stirring, for 4-5 minutes until beans are charred and tender.
  8. Stir in soy sauce and sesame seeds. Cook 1 minute. Remove from heat and stir in scallions.
  9. In a small bowl, mix katsu sauce with juice from half the lemon.
  10. Return pork chops to the skillet (or a clean pan) and brush with katsu glaze. Cook over medium heat for 1-2 minutes per side until glazed and heated through.
