Instructions

  1. Preheat your oven to 425°F (220°C). Dice the potatoes into ½-inch pieces. Peel and thinly slice the onion. Cut the broccoli into small florets. Zest and juice the lemon.
  2. Toss the potatoes and onion on a baking sheet with a drizzle of oil and a pinch of salt and pepper. Roast for 20-25 minutes, until golden and tender.
