- Pat the chicken dry with paper towels. Add the chicken and another drizzle of oil to the pot. Cook, stirring occasionally, until the chicken is browned and cooked through, 4–6 minutes. Season with curry powder, ¼ teaspoon salt (½ teaspoon for 4 servings), and pepper. Stir until evenly coated.
- Add ½ cup farro (1 cup for 4 servings; measure carefully—we sent extra) to the pot. Cook, stirring, for 1 minute. Stir in the chicken stock concentrates and 2½ cups warm water (4 cups for 4 servings), scraping up any browned bits from the bottom. Season with a big pinch of salt. Cover the pot and bring to a boil, then reduce the heat to low. Simmer, covered, until the farro is tender and flavors meld, 25–30 minutes.
- Shake the coconut milk well before opening. Stir the coconut milk, sweet Thai chili sauce, and 1 teaspoon sugar (2 teaspoons for 4 servings) into the pot. Bring to a boil over medium-high heat, then reduce to low. Simmer until flavors meld, 4–5 minutes.
- Stir in the juice from two lime wedges (four wedges for 4 servings). Season with salt and pepper to taste. Divide the soup among bowls. Sprinkle with lime zest and serve with the remaining lime wedges on the side.
