- Stir in the shrimp and cooked sausage. Cook, stirring occasionally, until the shrimp are pink and the sausage is cooked through, 3-4 minutes. Add splashes of water if needed to keep everything submerged. Turn off the heat.
- Meanwhile, finely chop the parsley. Halve the baguette lengthwise. In a small microwave-safe bowl, combine 2 tablespoons butter and a pinch of minced garlic. Microwave until softened, 15-20 seconds. Stir in half the parsley; season with salt and pepper. Toast the baguette until golden, then spread the cut sides with the garlic parsley butter. Cut each half crosswise on a diagonal.
