Instructions

  1. Wash and dry the asparagus. Preheat the broiler to high or heat the oven to 500°F. Thinly slice the garlic. Trim off and discard the woody ends of the asparagus, then cut the stalks into 2-inch pieces.
  2. Heat 1 tablespoon olive oil in a large pan over medium heat, using an ovenproof pan if possible. Add the asparagus and cook, tossing, until just beginning to soften, 1 to 2 minutes.

  5. While the tortelloni simmer, combine the panko breadcrumbs, Parmesan cheese and remaining 1 tablespoon olive oil in a small bowl. Season with salt and pepper.
  6. Remove the pan from the heat. If your pan is not ovenproof, transfer the tortelloni mixture to a small baking dish. Sprinkle the Parmesan-panko mixture evenly over the top.
