Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken sausages and cook, turning occasionally, until browned on all sides, about 5 minutes. Remove sausages and set aside.
  2. In the same skillet, add sliced bell peppers and onion. Cook, stirring occasionally, until softened and lightly charred, about 5 minutes. Add minced garlic and cook for 1 minute more.
  3. Stir in diced tomatoes (with their juices) and dried thyme. Season with salt and pepper. Bring to a simmer.
  4. Return the sausages to the skillet, nestling them into the sauce. Reduce heat to medium-low, cover and let simmer for 10 minutes, until sausages are cooked through and flavors meld.
