Instructions

  1. Adjust oven racks to top and middle positions and preheat to 425°F. Wash and dry all produce. Cut potatoes into ½-inch-thick wedges. Trim and thinly slice scallions, separating whites from greens; mince the whites. Cut broccoli into bite-size pieces if needed.
  2. On a baking sheet, toss potato wedges with a generous drizzle of oil, Fry Seasoning, salt and pepper. Spread in a single layer. Roast on the top rack until golden and tender, 20-25 minutes.
  3. While potatoes roast, in a large bowl combine ground beef, scallion whites, panko, beef stock concentrate, 1 tablespoon water, ½ teaspoon salt and a pinch of pepper. Mix gently and shape into two 1-inch-thick loaves. Place loaves on one side of a second baking sheet. (If you have extra sides or appetizers, prepare them now.)
  4. On the opposite side of the same sheet, toss broccoli with a drizzle of oil, salt and pepper. Sprinkle cheddar cheese over the broccoli. Roast on the middle rack until broccoli is tender and meatloaves are cooked through, 15-20 minutes. If broccoli finishes first, remove it and continue roasting meatloaves. For cheesy potatoes, skip the cheese on broccoli; instead, after 20 minutes, remove potato sheet, top with cheddar and return to top rack until melted, 2-3 minutes.
  5. Meanwhile, in a small saucepan over medium heat, combine ketchup, BBQ sauce, brown sugar and 2 tablespoons water. Cook, stirring occasionally, until thickened and warmed through, 3-5 minutes.
  6. Transfer meatloaves to a cutting board and slice crosswise. Arrange potatoes, meatloaves, broccoli, BBQ sauce, sour cream and scallion greens on a platter or serve family style. Let everyone build their own plate.
