Instructions

  1. Preheat oven to 425°F. Wash and dry potatoes. Cut into 1/2-inch thick rounds. Toss with 1 tbsp oil, fry seasoning and a pinch of salt. Spread on a baking sheet and roast for 20-25 minutes until golden and tender.
  2. While potatoes roast, thinly slice the onion. Slice the dill pickle into rounds. Thinly slice scallions. Cut bacon into 1-inch pieces.
  3. In a skillet over medium heat, cook bacon until crispy. Remove and set aside. Leave 1 tbsp bacon fat in the pan. Add sliced onion and cook, stirring occasionally, until softened and caramelized, about 8-10 minutes. Stir in BBQ sauce and cook 1 minute more. Transfer to a bowl.
  4. Form ground beef into two patties, season with salt. In the same skillet over medium-high heat, add 1 tsp oil. Cook patties 3-4 minutes per side for medium. In the last minute, top each patty with a slice of gouda and cover to melt.
  5. Split brioche buns and toast in the oven or a dry skillet until lightly golden.
  6. To assemble, place patties on bun bottoms. Top with BBQ onions, crispy bacon and pickle slices. Spread sour cream on bun tops if desired. Serve with potato rounds topped with pepper jack cheese (melted under broiler if you like), a dollop of sour cream and scallions.
