Instructions

  1. Wash and dry produce. Trim and thinly slice the mini cucumber into rounds. In a shallow dish, combine panko, half the Cajun spice blend, a drizzle of oil and a pinch of salt and pepper. Set aside.
  2. Pat the chicken cutlets dry with paper towels; season with salt and pepper. If the chicken is more than 1 inch thick, place between two pieces of plastic wrap and pound to about ½ inch thick. In a large bowl, combine sour cream, the remaining Cajun spice blend, salt and pepper. Add the chicken and rub the sour cream mixture all over. Working one piece at a time, press the chicken into the panko mixture until fully coated on both sides.
  3. Coat the air fryer basket with cooking spray. Arrange the coated chicken side by side in the basket (work in batches if needed). Spray the tops of the chicken with cooking spray. Air fry at 375°F for 6 minutes. Flip the chicken, spray again and air fry until cooked through and crispy, about 6 more minutes.
  4. Meanwhile, place the sliced cucumber in a small microwave-safe bowl. Add the white wine vinegar, 2 tablespoons water, 1 teaspoon sugar and a pinch of salt. Stir to combine. Microwave until the cucumber turns dark green, 1-2 minutes. Refrigerate until ready to serve. In a separate small bowl, combine honey and Sriracha (if honey is stiff, warm the packet in hot water for a few seconds). Add half the mayonnaise and stir until smooth.
  5. Halve the brioche buns and toast them. In a medium bowl, combine the coleslaw mix, buttermilk ranch dressing, remaining mayonnaise, ½ teaspoon sugar and a pinch of salt and pepper. Toss to coat.
  6. Spread the cut sides of the top buns with the hot honey mayo. Fill the buns with the crispy chicken, a few slices of bacon and the quick pickles (drained). Serve the sandwiches with the ranch slaw on the side.
