Instructions

  1. Preheat the oven to 400°F. Wash and dry all produce. In a medium pot, bring 3½ cups water and the veggie stock concentrate to a boil. Halve the orange and lemon crosswise. Peel the sweet potato and cut into ½-inch cubes.
  2. On a baking sheet, toss the sweet potato cubes with a drizzle of olive oil, salt and pepper. Roast until lightly browned and tender, 20-25 minutes.
  3. Once the water is boiling, add the farro to the pot. Cover, reduce heat to low and simmer until tender, 25-30 minutes. If any water remains, drain the farro.
  4. In a medium bowl, whisk together 1 teaspoon Dijon mustard, the juice from one lemon half, the juice from one orange half and a large drizzle of olive oil. Season with salt and pepper. For extra citrus, peel the remaining orange half and chop into small pieces.
  5. Halve the avocado, remove the pit, peel and thinly slice.
  6. Divide the cooked farro between plates. Drizzle with half the dressing. Toss the arugula with as much remaining dressing as you like, then place on top of the farro. Top with roasted sweet potato, avocado slices and orange pieces (if using). Sprinkle with almonds and feta cheese.
