Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with foil or parchment paper.
  2. In a small bowl, mix the hoisin sauce and garlic powder to make the glaze. Set aside.
  3. Trim the ends of the green beans and place them on one side of the prepared baking sheet. Drizzle with ponzu sauce and a little oil, then toss to coat. Season with salt and pepper.
  4. Pat the pork tenderloin dry with paper towels. Season all over with salt and pepper. Place the pork on the other side of the baking sheet, away from the green beans.
  5. Roast for 15 minutes. Meanwhile, in a small saucepan, combine the rice, 1 cup water and a pinch of salt. Bring to a boil, then reduce heat to low, cover and simmer for 15 minutes until tender. Remove from heat and let stand covered.
  6. After 15 minutes of roasting, brush the pork tenderloin with the hoisin glaze. Return to the oven and roast for another 5-10 minutes, until the pork reaches an internal temperature of 145°F (63°C) and the green beans are tender.
  7. While the pork rests, make the sriracha mayo: in a small bowl, stir together the mayonnaise and sriracha. Thinly slice the scallions.
  8. Fluff the cooked rice with a fork, then stir in the butter and most of the sliced scallions (reserve some for garnish).
  9. Slice the pork tenderloin into medallions. Serve the pork over the scallion rice, alongside the ponzu green beans. Drizzle any remaining glaze over the pork, then top with a dollop of sriracha mayo. Garnish with the remaining scallions and sesame seeds.
