Instructions

  1. Preheat the oven to 425°F (220°C) and position a rack in the top third. Wash and dry all produce. Cut the potatoes into ½-inch-thick wedges. Quarter the grape tomatoes. Trim the bottom 1 inch from the asparagus. Thinly slice the chives and finely chop the parsley leaves. Peel and mince or grate the garlic. In a small microwave-safe bowl, combine the butter and garlic powder; microwave until softened, about 10 seconds. Season with salt and pepper and set aside.
  2. On one side of a baking sheet, toss the potato wedges with a generous drizzle of olive oil, half of the Italian seasoning, salt and pepper. Spread them in a single layer. Roast on the top rack for 10 minutes.
  3. Meanwhile, in a small bowl, combine the quartered tomatoes, balsamic vinegar, half of the chives, half of the chopped parsley and a pinch of the minced garlic. Season with salt and pepper. Set aside to marinate, stirring occasionally. In a medium bowl, combine the ground beef, remaining chives, remaining parsley, remaining Italian seasoning, ¾ teaspoon salt (or 1½ teaspoons for 4 servings) and pepper. Form into 2 patties, each slightly wider than the brioche buns.
  4. After the potatoes have roasted for 10 minutes, remove the baking sheet from the oven. On the empty side, toss the asparagus with a drizzle of olive oil, salt and pepper. Push the spears together and sprinkle with Parmesan cheese. Return the sheet to the top rack and roast until the potatoes are browned and the asparagus is tender, about 10-12 minutes more.
  5. While the asparagus roasts, heat a drizzle of olive oil in a large skillet over medium-high heat. Add the patties and cook to your desired doneness, 3-5 minutes per side. During the last 1-2 minutes, top each patty with mozzarella cheese and cover the pan to melt the cheese. In a small bowl, stir together the ketchup and mayonnaise to make the sauce.
  6. Toast the brioche buns, then spread the cut sides with the garlic butter. Assemble the burgers: place a patty on each bun bottom, spoon the bruschetta topping over the patty and close with the bun top. Divide the burgers, potato wedges and asparagus between plates. Serve the ketchup-mayo sauce on the side.
