- Preheat oven to 450°F (230°C) and adjust rack to the middle position. Wash and dry all produce. Cut potatoes into ½-inch cubes.
- On a baking sheet, toss potatoes with a drizzle of olive oil, salt and pepper. Roast until golden and tender, 20-25 minutes, tossing halfway through.
- In a small bowl, combine panko breadcrumbs, mozzarella cheese, a drizzle of olive oil and a pinch of salt and pepper. Set aside.
- Lightly oil another baking sheet. Place chicken breasts on the sheet. Brush 1 tablespoon of pesto onto the top of each chicken breast (you may have some pesto left over). Press the panko mixture firmly onto the pesto-coated tops to form a crust.
- Roast chicken until cooked through and no longer pink in the center, about 20 minutes. The crust should be golden and crispy.
- While chicken roasts, halve the lemon. In a large bowl, combine mixed greens, dried cranberries and almonds. Squeeze lemon juice over the salad, drizzle with olive oil and toss to coat. Season with salt and pepper to taste.
- Divide roasted potatoes and chicken between plates. Serve with the cranberry almond salad on the side.

For extra crispy potatoes, make sure they are in a single layer on the baking sheet and don’t overcrowd.
