Instructions

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. Peel and dice sweet potatoes into 1/2-inch cubes. Core and dice bell pepper into 1/2-inch pieces. Cut pineapple into 1/2-inch chunks. Thinly slice scallions, separating white and green parts. Finely chop chili pepper (remove seeds for less heat).
  3. In a large bowl, combine ground pork, half the hoisin sauce, half the chopped scallion whites, half the chili pepper and a pinch of salt and pepper. Tear bread into small pieces and add to the mixture. Mix until just combined.
  4. Shape the pork mixture into two oval meatloaves and place on the prepared baking sheet.
  5. In a separate bowl, toss sweet potato cubes, bell pepper pieces and pineapple chunks with a drizzle of oil, salt and pepper. Spread around the meatloaves on the baking sheet.
  6. Bake for 20 minutes. Meanwhile, mix remaining hoisin sauce with 1 tablespoon pineapple juice (reserved from the pineapple) to make the glaze.
  7. Remove baking sheet from oven. Brush glaze over meatloaves. Return to oven and bake for another 10-15 minutes, until meatloaves are cooked through (internal temp 160°F) and vegetables are tender.
  8. Garnish with remaining scallion greens and chili pepper (if desired). Serve meatloaves with roasted vegetables and pineapple on the side.
