- Preheat oven to 425°F. Line a baking sheet with parchment paper.
- Trim and peel carrots, then cut into ½-inch thick rounds. Toss with a drizzle of olive oil, salt and pepper. Spread on one side of the baking sheet. Roast for 10 minutes.
- Meanwhile, zest and juice the lemon. Mince the garlic. Finely chop the cilantro (stems and leaves).
- In a small bowl, combine the lemon zest, half the lemon juice, half the minced garlic, half the cilantro, cumin, chili flakes and a pinch of salt. Stir in 2 tablespoons olive oil to make the chimichurri. Set aside.
- In a small pot, bring 1 cup water and the veggie stock concentrate to a boil. Stir in the Israeli couscous, reduce heat to low, cover and simmer for 8-10 minutes until tender. Drain any excess liquid.
- While couscous cooks, season barramundi fillets with salt and pepper. Heat a non-stick skillet over medium-high heat with a drizzle of oil. Cook fillets skin-side down for 3-4 minutes until skin is crispy. Flip and cook 2-3 minutes more until fish is opaque and flakes easily.
- Fluff the cooked couscous with a fork, then stir in the garlic herb butter and remaining lemon juice and cilantro. Season to taste.
- Serve the barramundi over the couscous, with roasted carrots alongside. Drizzle chimichurri over the fish and carrots. Enjoy!
