Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Cut each zucchini in half lengthwise. Use a spoon to scoop out the centers, leaving about 1/4-inch thick shells. Chop the scooped-out zucchini flesh finely and set aside.
  3. In a small saucepan, bring 1 cup of water to a boil. Add the veggie stock concentrate and stir to dissolve. Add the Israeli couscous, reduce heat to low, cover and simmer for 8-10 minutes until tender. Drain any excess liquid and set aside.
  4. In a medium skillet, heat 2 teaspoons of olive oil over medium heat. Add the chopped zucchini flesh, diced tomatoes, minced garlic, Italian seasoning and chili flakes. Cook for 3-4 minutes until softened. Season with salt and pepper to taste.
  5. Combine the cooked couscous with the vegetable mixture. Stir in half of the Parmesan cheese.
  6. Place the zucchini shells on the prepared baking sheet. Brush the inside of each shell with a little olive oil. Fill each shell with the couscous mixture, pressing gently.
  7. Top each stuffed zucchini with shredded mozzarella and the remaining Parmesan cheese.
  8. Bake for 10-12 minutes, until the cheese is melted and bubbly and the zucchini is tender.
  9. Remove from the oven and let cool for 2 minutes. Drizzle with balsamic glaze before serving.
