Instructions

  1. In a small bowl, combine sour cream and sriracha. Set aside.
  2. Thinly slice the cucumber and radishes. In a medium bowl, toss with white wine vinegar and a pinch of salt. Let sit while you prepare the rest.
  3. Mince the garlic. Slice the scallions, separating white and green parts. Chop the cilantro.
  4. In a large skillet, heat sesame oil over medium-high heat. Add ground beef and cook, breaking it apart, until browned, about 4-5 minutes. Add garlic and white parts of scallions; cook 1 minute more.
  5. Stir in soy sauce and cook until sauce thickens slightly, about 1 minute. Remove from heat.
  6. Warm tortillas in a dry skillet or microwave.
  7. Assemble tacos: fill each tortilla with beef, pickled veggies, shredded red cabbage and a drizzle of sriracha sour cream. Garnish with green scallions and cilantro.

Recipe Tips

For extra heat, add more sriracha to the sour cream or drizzle extra over the tacos.

If you prefer corn tortillas, feel free to substitute them for flour.
