- Place the tortillas on a work surface. Evenly sprinkle with cheddar cheese, then top with the mushroom filling and Monterey Jack cheese. Fold the tortillas in half to create the melts.
- Heat a drizzle of vegetable oil in the same pan over medium-high heat. Working in batches if needed, add the tortilla melts and cook until golden brown on the first side, 1-2 minutes. Flip and cook for 1 minute more. Transfer to a paper towel-lined plate.
