Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Peel and dice the sweet potatoes into 1/2-inch cubes. Seed and dice the bell pepper and poblano into similar-sized pieces. Mince the garlic. Slice the scallions thinly, separating white and green parts. Cut the lime into wedges.
  3. On the prepared baking sheet, toss the sweet potatoes, bell pepper and poblano with a drizzle of oil, salt and pepper. Roast for 20-25 minutes, until tender and lightly browned.
  4. While the vegetables roast, pat the pork tenderloin dry with paper towels. Season generously with salt and pepper on all sides.
  5. Heat a large skillet over medium-high heat with a tablespoon of oil. Sear the pork tenderloin for 2-3 minutes per side, until golden brown all over.
  6. Reduce heat to medium. Add the sweet soy glaze and 2 tablespoons of water to the skillet. Cook, turning the pork occasionally, until the glaze thickens and coats the pork, about 4-5 minutes. The internal temperature should reach 145°F (63°C) for medium.
  7. Transfer the pork to a cutting board and let rest for 5 minutes. Then slice into medallions.
  8. In a small bowl, combine the minced garlic, a squeeze of lime juice and 1 tablespoon of butter (or oil) to make a garlic lime butter. Microwave for 10 seconds or until melted.
  9. When the roasted vegetables are done, transfer them to a serving platter. Drizzle with the garlic lime butter and toss gently. Top with sliced pork and drizzle any remaining pan sauce over the top. Garnish with sliced scallion greens and serve with lime wedges.
