- While the pasta cooks, heat the remaining 2 teaspoons olive oil in the same pan over medium-high heat. Add the zucchini and remaining Tuscan Heat Spice. Cook, stirring occasionally, until golden and tender, 6 to 8 minutes.
- Reduce the heat to medium-low. Stir the marinara sauce, chicken stock concentrate and cooked chicken into the pan with the zucchini.
- Add the drained penne, 1/4 cup reserved pasta water and remaining 2 tablespoons butter. Stir until the pasta is well coated, adding more reserved pasta water 1 tablespoon at a time if the sauce needs loosening. Season with salt and pepper.
- If the pan is not ovenproof, transfer the pasta mixture to a baking dish. Sprinkle evenly with mozzarella, then top with the buttered panko.
- Broil or bake until the mozzarella is melted and bubbly and the panko is golden, 2 to 4 minutes. Watch closely to prevent burning.
- Serve hot straight from the pan or baking dish.
