Instructions

  1. Bring a large pot of salted water to a boil. Wash and dry all produce. Halve the grape tomatoes lengthwise. Trim and thinly slice the scallions, separating the white parts from the green tops. Peel and mince or grate the garlic.

  3. Once the water is boiling, add the spaghetti to the pot. Cook until al dente, 9-11 minutes (you’ll start the tomatoes after 5 minutes). Reserve 1 cup of the pasta cooking water, then drain the spaghetti well.
  4. After the spaghetti has cooked for 5 minutes, melt 2 tablespoons of butter in the pan used for the chicken over medium-high heat. Add the halved tomatoes, scallion whites and garlic; cook until the garlic and scallions are softened and fragrant, 1-2 minutes. If the mixture begins to brown too quickly, reduce the heat to medium.
  5. Reduce the heat under the pan with the tomato mixture to medium. Add the cream sauce base and the remaining Italian seasoning. (Tip: Cut the top off the cream sauce base carton to open it fully; transfer the contents using a spoon or spatula to scrape the sauce from the carton sides.) Stir in the cream cheese and bring to a simmer; cook until melted and combined. Season with salt and pepper.
  6. Add the drained spaghetti and cooked chicken to the pan with the sauce; stir until coated and creamy, adding splashes of the reserved pasta cooking water as needed. Stir in half of the Parmesan cheese and season with salt and pepper. Divide the chicken spaghetti between bowls. Sprinkle with the scallion greens and the remaining Parmesan cheese. Serve immediately.
