- While the chicken roasts, halve the lemon. In a large bowl, toss the mixed greens with a squeeze of lemon juice and 4 teaspoons of olive oil. Season with salt and pepper to taste.
- Divide the roasted potatoes and chicken among plates. Serve with the lemon green salad on the side.
