Instructions

  1. Preheat your oven to 425°F. Line a baking sheet with parchment paper.
  2. Dice the potatoes into 1/2-inch cubes. Place in a medium pot, cover with cold water and add a pinch of salt. Bring to a boil and cook until fork-tender, about 12-15 minutes. Drain and return to the pot.
  3. While potatoes cook, cut the bacon into small pieces. In a skillet over medium heat, cook bacon until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate to drain.

  6. Pat the chicken cutlets dry and season both sides with salt and pepper. Brush each cutlet with the mayonnaise mixture, then press into the breadcrumb mixture to coat evenly. Place on the other side of the baking sheet with the asparagus.
  7. Bake for 15-18 minutes, until the chicken is golden and cooked through (internal temperature 165°F) and the asparagus is tender.
  8. While the chicken bakes, mash the potatoes with sour cream, remaining cheddar cheese, half the cooked bacon and half the chopped chives. Season with salt and pepper to taste.
