- Melt 1 tablespoon of butter in a large pan over medium heat. Add the garlic and cook until softened, 2-3 minutes.
- Add ¼ cup of the reserved pasta cooking water, the stock concentrate, cream cheese, sour cream, half the Parmesan (save the rest for serving) and 1 tablespoon of butter to the pan. Whisk until combined and creamy. Stir in the tomato and sliced bell pepper. Squeeze in some lemon juice to taste. Season generously with salt and pepper.
- Add the drained ravioli to the pan and gently toss until thoroughly coated. Divide among plates and top with the remaining Parmesan and lemon zest. Serve with lemon wedges on the side. If the sauce seems thick, add more reserved pasta water a splash at a time.
