Stir in tomato paste, chicken stock concentrate and 1/3 cup water. Reduce heat to medium-low and simmer until slightly thickened, 1-2 minutes.
- Fluff rice with a fork and stir in 1 tbsp butter. Add rice to the pan with beef mixture and stir to combine; season with salt and pepper. Once peppers are roasted, remove from oven. Carefully flip peppers and stuff each with up to half the filling. Nestle stuffed peppers in the pan with remaining filling. If pan isn’t ovenproof, transfer to a baking dish. Sprinkle with Mexican cheese blend. Return to top rack and roast until cheese melts, 3-4 minutes.
