Instructions

  1. Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente, 9-11 minutes. Reserve 1/2 cup pasta water, then drain.
  2. Meanwhile, trim and halve the zucchini lengthwise, then cut into 1/4-inch half-moons. Thinly slice the chili pepper. Rinse shrimp and pat dry with paper towels.
  3. Heat a drizzle of olive oil in a large pan over medium-high heat. Add zucchini and as much chili as you like. Cook until zucchini is lightly browned, 2-3 minutes.
  4. Push zucchini to one side of the pan. Add another drizzle of olive oil to the empty side. Add shrimp and cook until opaque, 3-4 minutes.
