Instructions

  1. Preheat oven to 425°F with rack in middle. Dice potatoes into ½-inch pieces. Place in a medium pot with enough salted water to cover by 2 inches. Bring to a boil and cook until tender, 10-15 minutes. Reserve ½ cup potato cooking liquid, then drain. Return potatoes to pot and cover to keep warm.

Transfer chicken to one side of a baking sheet. Toss asparagus on the other side with oil, salt and pepper. Roast until chicken is cooked through and asparagus is tender, 12-14 minutes.
  5. To the pot with potatoes, add sour cream and 2 tablespoons butter (4 for 4 servings); mash until smooth, adding reserved potato liquid as needed. Season with salt and pepper. In the same pan, heat 1 tablespoon butter (2 for 4) and a drizzle of oil over medium heat. Cook shallot until fragrant, 1-2 minutes. Reduce heat to low; whisk in ¼ cup water (½ cup for 4), fig jam and demi-glace. Simmer until slightly thickened, 1-2 minutes.
  6. Slice chicken. Divide chicken, asparagus and mashed potatoes among plates. Spoon pan sauce over chicken; crumble prosciutto over potatoes. Garnish with chives.
