Instructions

  1. Adjust rack to top position and preheat oven to 425°F. Wash and dry produce. Cut potatoes into ½-inch-thick wedges. Halve buns.
  2. Toss potatoes on a baking sheet with a large drizzle of oil, Fry Seasoning, salt and pepper. Roast on top rack until browned and tender, 20-25 minutes.
  3. Meanwhile, in a small bowl, combine mayonnaise with chipotle powder to taste (start with a pinch, then add more if desired). Season with salt and pepper.
  4. In a medium bowl, combine ground turkey and half the onion powder (use all for 4 servings). Form into two patties (four for 4), each slightly wider than a burger bun. Season all over with salt and pepper.
  5. Heat a drizzle of oil in a large pan over medium-high heat. Add patties and cook until browned and cooked to desired doneness, 3-5 minutes per side. In the last 1-2 minutes, top each patty with cheddar; cover pan to melt cheese.
  6. Meanwhile, toast buns until golden. Spread bottom buns with BBQ sauce. Spread top buns with chipotle mayo. Fill with patties and crispy fried onions. Divide burgers and potato wedges between plates. Serve with any remaining BBQ sauce on the side.
