Instructions

  1. Wash and dry all produce. In a medium microwave-safe bowl, combine the white wine vinegar, ¼ cup water, 1 tablespoon sugar and a pinch of salt. Stir in the shredded red cabbage. Microwave for about 1 minute, then stir and set aside to pickle until ready to serve.
  2. Quarter the lemon. Pick the dill fronds and roughly chop them. Trim the mini cucumbers, halve them lengthwise, then slice crosswise into ½-inch-thick half-moons. In a small bowl, combine the mayonnaise, Dijon mustard and the juice from half the lemon (use the whole lemon for 4 servings). Set aside.
  3. In a second medium bowl, combine the yogurt, creamy horseradish sauce and half the chopped dill. Season with salt and pepper. Stir in the cucumber slices until coated. Refrigerate until ready to serve.
  4. Massage the grain blend package to separate the grains. Partially open the package and microwave until warmed through, 1½ to 2 minutes. Transfer the grains to a third medium bowl. Add the everything bagel seasoning and a generous drizzle of olive oil. Stir to combine.
  5. Pat the steelhead trout dry with paper towels and season generously with salt and pepper. Heat a large drizzle of cooking oil in a large nonstick pan over medium heat. Place the trout in the pan, skin side down. Cook until the skin is crispy, 5 to 6 minutes. Flip and cook until the fish is golden and cooked through, 4 to 6 minutes more. Transfer to a plate.
  6. Divide the trout, seasoned grains, pickled cabbage (drained) and cucumber salad among plates. Drizzle the trout with the lemon-Dijon sauce and garnish with the remaining dill. Serve immediately.
