Ingredients
Instructions
- Preheat oven to 450°F (230°C) with a rack in the top position. Wash and dry produce. Halve, peel and cut the onion into ½-inch wedges. Slice the top off the green pepper, remove the core and cut crosswise into ½-inch rings.
- Toss onion and green pepper on a lightly oiled baking sheet; season with salt and pepper. Add the sausage to the same sheet. Roast on the top rack, flipping halfway, until veggies are tender and sausage is cooked through, 15-17 minutes.
- Meanwhile, in a medium microwave-safe bowl, combine ¼ cup water and 2 tbsp butter. Microwave until hot and butter melts, about 1 minute. Whisk in tomato paste until smooth. Season with salt and pepper.
- Remove roasted veggies and sausage from the baking sheet. Carefully wipe the sheet clean. Place flatbreads on the sheet and toast on the top rack until golden, 5-7 minutes. While flatbreads toast, slice the sausage diagonally into ½-inch pieces.
- Remove sheet from oven. Spread each flatbread evenly with the tomato butter sauce. Top with mozzarella, Monterey Jack, sausage and roasted veggies. Season with salt and pepper. Bake until cheese melts and flatbreads are golden brown, 3-5 minutes.
- Let flatbreads cool slightly, then slice into pieces. Divide between plates and serve.
Recipe Tips
For extra crispiness, toast the flatbreads directly on the oven rack before topping.
If you prefer a milder pepper, substitute the long green pepper with a bell pepper.
Let the flatbreads rest for a minute after baking to make slicing easier.
