- In a large bowl, toss lettuce with desired amount of dressing. Add tomatoes, croutons, half the roasted chickpeas and half the Parmesan; toss to combine. Divide salad among plates. Top with remaining chickpeas and Parmesan. Serve with remaining lemon wedges on the side.
