Instructions

  1. Adjust an oven rack to the top position and preheat to 450°F. Wash and dry all produce. Trim the zucchini, halve lengthwise, then cut crosswise into ½-inch half-moons. Quarter the lemon. Strip about 1 teaspoon of thyme leaves from the stems and finely chop.

  5. Melt half of the garlic herb butter in the same pan over medium heat. Add the chopped thyme and cook until fragrant, 20-30 seconds. Stir in the chicken stock concentrate and ¼ cup water (⅓ cup for 4 servings), then bring to a simmer. Once simmering, turn off heat. Stir in the sour cream and a squeeze of lemon juice. Season with pepper.
  6. Fluff the rice with a fork and stir in the remaining garlic herb butter. Taste and adjust seasoning with salt and pepper. Divide the rice, pork and zucchini among plates. Spoon the sauce over the pork. Serve with remaining lemon wedges on the side.
