Instructions

  1. Preheat your oven to 425°F. Line a baking sheet with foil.
  2. Halve the fingerling potatoes lengthwise. Toss with 1 tbsp cooking oil, 1 tsp salt and the fry seasoning. Spread on one side of the baking sheet. Roast for 20 minutes.
  3. While potatoes roast, thinly slice the onion. Cut bacon into 1-inch pieces. Slice scallions thinly, separating white and green parts.
  4. In a skillet over medium heat, cook bacon until crispy. Remove and set aside, leaving about 1 tbsp drippings in the pan.
  5. Add sliced onion to the skillet with a pinch of salt. Cook, stirring occasionally, until softened and golden, about 8 minutes. Stir in BBQ sauce and cook 1 minute more. Remove from heat.
  6. Form ground beef into two patties, season with remaining salt. In a separate skillet over high heat, cook patties 3-4 minutes per side for medium. In the last minute, top each patty with a slice of gouda and cover to melt.
  7. When potatoes are done, sprinkle white cheddar and scallion whites over them. Return to oven for 2 minutes until cheese melts. Top with sour cream and scallion greens.
  8. Toast brioche buns in the oven or a dry skillet. Spread a little butter on each half.
  9. Assemble burgers: place patty on bottom bun, add bacon, BBQ onions and sliced pickles. Close with top bun. Serve with cheesy potatoes.
