Instructions

  1. Wash and dry all produce. Trim and thinly slice scallions, separating whites from greens. Trim the mini cucumber, slice lengthwise into ¼-inch-thick planks, then cut crosswise into ¼-inch-thick matchsticks.
  2. Place pulled pork in a medium microwave-safe bowl. Using two forks, break the pork into smaller pieces. Stir in scallion whites, hoisin sauce, Sriracha and half the sesame seeds. Cover with plastic wrap and microwave until warmed through, 2-3 minutes.
  3. Meanwhile, trim the root end from the lettuce and separate the leaves. Reserve 6 whole leaves for serving (12 for 4 servings); thinly slice the remaining leaves. Halve the lime.
  4. In a second medium bowl, combine the cucumber matchsticks, scallion greens, remaining sesame seeds, sugar, lime juice and a pinch of salt. Stir to combine.
  5. Pick cilantro leaves from stems and tear into pieces. Divide the whole lettuce leaves among plates. Fill each leaf with some shredded lettuce, the pork mixture and as much marinated cucumber as you like (drain first). Sprinkle with cilantro and crispy fried onions. Serve any extra cucumber on the side.

Recipe Tips

For extra heat, add more Sriracha to the pork mixture.

If you prefer not to microwave, you can warm the pulled pork in a skillet over medium heat.
