Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Slice the zucchini into thin rounds. Halve the grape tomatoes. Place both on the prepared baking sheet, drizzle with olive oil, season with salt and pepper and toss to coat. Roast for 15-20 minutes until tender and lightly browned.

  6. Spread the lemon ricotta mixture evenly over each warm flatbread. Top with the roasted zucchini and tomatoes. Drizzle with the honey-lemon mixture and sprinkle with the chopped herbs and remaining lemon zest.
  7. Slice and serve immediately.
