Instructions

  1. Preheat oven to 425°F. Bring a small pot of salted water to a boil for the rice.

  6. Pat chicken cutlets dry and season with salt and pepper. Heat 1 teaspoon oil in a large skillet over medium-high heat. Cook chicken 3-4 minutes per side until golden and cooked through. Transfer to a plate.
  7. Reduce heat to medium. Add the wasabi-soy mixture to the skillet and cook 1 minute, stirring. Return chicken to pan, turning to coat. Simmer 1-2 minutes until sauce thickens slightly.
  8. Toss roasted broccoli with a splash of ponzu sauce (or extra lime juice) and scallion whites. Serve chicken over ginger rice, drizzle with remaining sauce and garnish with scallion greens.
