- Prepare the creamy lemon sauce: In another bowl, mix together 1.5 tablespoons sour cream, 2 tablespoons yogurt, the juice of half the lemon and a pinch of salt and pepper. Set aside.
- Season the salmon: Pat the salmon fillets dry and season both sides with salt and pepper. Place the salmon skin-side down on the other side of the baking sheet (or on a separate lined pan). Spread a thin layer of the creamy lemon sauce over the top of each fillet, then press the walnut-panko mixture onto the sauce to form a crust.
- Roast the salmon and zucchini: Place the baking sheet in the oven and roast for 12-15 minutes, until the salmon is cooked through and flakes easily and the zucchini is tender and lightly browned.
- While everything roasts, slice the scallions thinly. When the rice is done, stir in the sliced scallions.
