Instructions

  1. Wash and dry produce. Thinly slice scallions, separating whites from greens. Halve celery lengthwise, then thinly slice crosswise.

  5. Stir in 1 cup water (2 cups for 4 servings), the beans with their liquid and the stock concentrates. Bring to a boil, then cover and cook until veggies are tender, chicken is cooked through and soup has thickened, 3-5 minutes. Remove from heat.
  6. Stir in crème fraîche. Season with salt and pepper to taste. Divide soup between bowls and sprinkle with scallion greens. Serve. (Chicken is fully cooked when internal temperature reaches 165°F.)
