Instructions

  1. Wash and dry all produce. Trim the ends off the cucumber, then quarter it lengthwise and slice crosswise into 1/2-inch pieces. Dice the tomato into 1/2-inch pieces. Halve, peel and finely chop the red onion. Peel and mince or grate the garlic. Trim the root end from the lettuce and separate the leaves.
  2. In a medium bowl, combine the cucumber, tomato, 2 tablespoons of the chopped onion (use 4 tablespoons if serving 4) and the Greek vinaigrette. Toss to coat everything evenly.
  3. Heat a drizzle of oil in a large pan over medium-high heat. Add the remaining chopped onion and a pinch of salt; cook, stirring, until slightly softened, about 2-3 minutes. Add the ground turkey, Turkish spice blend, garlic and half the soy sauce (use all the soy sauce if serving 4). Cook, breaking the meat into pieces, until the turkey is cooked through, 4-6 minutes. Season with salt and pepper to taste. For a saucier texture, stir in a splash of water near the end of cooking.
  4. Divide the lettuce leaves among plates. Fill each leaf with the cooked turkey and the cucumber-tomato salad. Spoon any remaining vinaigrette from the bowl over the top. Garnish with crumbled feta cheese and serve immediately.

For extra crunch, use iceberg or butter lettuce instead of romaine.
