Instructions

  1. Adjust an oven rack to the upper position and preheat the oven to 425°F. For extra-crispy crust, place a baking sheet in the oven while it heats; lightly oil the sheet before using.   3. Place the flatbreads on the preheated oiled baking sheet. Sprinkle evenly with the Italian cheese blend and the remaining Italian seasoning. Top with the mushroom mixture. Season with salt and pepper.
  4. Bake the flatbreads until the cheese is melted and the crust is golden brown, about 7 minutes. Remove from the oven and drizzle with truffle oil to taste. Start with a few drops and add more as desired; you may not use all the oil.
  5. In a medium bowl, toss the arugula with a squeeze of lemon juice and a drizzle of olive oil. Season with salt and pepper.
  6. Cut the flatbreads into slices. Serve with the arugula salad on the side. Optionally, top the flatbread with some salad.
