Instructions

  1. Preheat the oven to 450°F (230°C) with a rack in the top position. Wash and dry all produce. Trim the zucchini and slice it crosswise into ½-inch-thick rounds.
  2. In a small bowl, combine the mayonnaise, 1 teaspoon ketchup, 1 teaspoon fry seasoning, ½ teaspoon sugar and sriracha to taste. Season with salt and pepper. Set the spicy special sauce aside.
  3. Melt 1 tablespoon butter in a small pot over medium-high heat. Add the garlic powder and cook until fragrant, about 30 seconds. Stir in the rice, ¾ cup water and a big pinch of salt. Bring to a boil, then cover, reduce heat to low and cook until the rice is tender, 15-18 minutes. Keep covered off heat until ready to serve.
  4. While the rice cooks, toss the zucchini rounds on a baking sheet with a large drizzle of oil, salt and pepper. Sprinkle each round with sesame seeds (reserve any remaining seeds for serving). Roast on the top rack until the zucchini is tender and the sesame seeds are lightly browned, 14-16 minutes. If needed, broil for 1-2 minutes to toast the seeds further.
  5. Pat the steak dry with paper towels and season all over with salt and pepper. Heat a drizzle of oil in a large pan over medium-high heat. Add the steak and cook to your desired doneness, 5-7 minutes per side. Transfer the steak to a cutting board to rest. Wipe out the pan.
  6. Rinse the shrimp under cold water and pat dry. Season the shrimp with the remaining fry seasoning, salt and pepper. Heat a drizzle of oil in the same pan over medium-high heat. Add the shrimp and cook, stirring occasionally, until opaque and cooked through, 3-4 minutes. Remove the pan from heat.
  7. Pour the sweet soy glaze into a small microwave-safe bowl, cover with plastic wrap and microwave until warmed through, about 1 minute. Fluff the rice with a fork and season with salt and pepper. Thinly slice the steak against the grain. Divide the rice, zucchini, steak and shrimp among plates. Drizzle the steak with the warm sweet soy glaze and sprinkle with any remaining sesame seeds. Serve with the spicy special sauce on the side.
