Instructions

  1. In a small pot, combine the jasmine rice, 1¼ cups water (2¼ cups for 4 servings) and a pinch of salt. Bring to a boil, then cover and reduce the heat to low. Simmer until the rice is tender, 15-18 minutes. Keep covered off the heat until ready to serve.
  2. Meanwhile, wash and dry the produce. Trim the green beans if necessary and cut them crosswise into 2-inch pieces. Quarter the lime. Pick the cilantro leaves from the stems and roughly chop them.
  3. Heat a drizzle of oil in a large pan over medium-high heat. Add the ground turkey and season with salt and pepper. Press the turkey into an even layer with a spatula. Cook undisturbed until browned on the bottom, 3-4 minutes. Then break the meat into pieces and continue cooking until fully cooked through, 2-4 minutes more. If there is excess grease, carefully pour it out.
  4. While the turkey cooks, place the green beans in a medium microwave-safe bowl with a splash of water. Cover with plastic wrap and microwave until tender, 1-2 minutes. (Alternatively, steam the green beans in a small pot with a splash of water until just tender, 5-7 minutes.) Drain any excess water.
  5. Add the cooked green beans, sweet Thai chili sauce, 2½ tablespoons sweet soy glaze (measure carefully), 1 tablespoon butter and ½ teaspoon sugar to the pan with the turkey. (For 4 servings, use 5 tablespoons sweet soy glaze, 2 tablespoons butter and 1 teaspoon sugar.) Cook, stirring, until the turkey mixture is thoroughly coated, 1-2 minutes. Remove from heat and stir in a squeeze of lime juice to taste.
  6. Fluff the rice with a fork and stir in 1 tablespoon butter (2 tablespoons for 4 servings). Season with salt and pepper. Divide the rice between bowls and top with the turkey and green bean stir-fry. Sprinkle with crispy fried onions and chopped cilantro. Serve with the remaining lime wedges on the side.

Recipe Tips

For even cooking, make sure to cut the green beans into uniform 2-inch pieces.

If you don’t have a microwave, you can steam the green beans on the stovetop in a small pot with a splash of water until tender.

Adjust the amount of sweet chili sauce to your preferred spice level. Add more for extra heat or less for a milder flavor.
