Instructions

  1. Preheat oven to 400°F. Bring a small pot of water to a boil for the rice.
  2. Peel and grate the ginger. Trim and thinly slice the scallions, separating white and green parts. Cut the lime into wedges.
  3. In a small bowl, combine the bulgogi sauce, ketchup, Korean chili flakes and a squeeze of lime juice. Set aside.
  4. In a large bowl, mix the ground beef, panko breadcrumbs, half the scallion whites, half the grated ginger, 1 teaspoon salt and a few grinds of pepper. Form into two oval meatloaves and place on a baking sheet lined with parchment.
  5. Brush the meatloaves with half of the glaze. Bake for 20-25 minutes or until cooked through.
  6. Meanwhile, add the jasmine rice to the boiling water with a pinch of salt. Cook according to package directions. Fluff with a fork and stir in the remaining grated ginger and a pat of butter.
  7. Cut the broccoli into small florets. Toss with cooking oil, a pinch of salt and pepper. Spread on a separate baking sheet and roast for 15-18 minutes, until tender and lightly browned.
  8. Sprinkle the roasted broccoli with sesame seeds and the remaining scallion greens.
  9. Serve the meatloaves with the remaining glaze on the side, alongside the ginger rice and sesame broccoli. Garnish with lime wedges.
