Instructions

  1. In a small pot, combine the jasmine rice, 1¼ cups water (2¼ cups for 4 servings) and a pinch of salt. Bring to a boil, then cover and reduce the heat to low. Simmer until the rice is tender, 15-18 minutes. Keep covered off the heat until ready to serve.
  2. Meanwhile, wash and dry the produce. Trim the green beans if necessary and cut them crosswise into 2-inch pieces. Quarter the lime. Pick the cilantro leaves from the stems and roughly chop them.
  3. Heat a drizzle of oil in a large pan over medium-high heat. Add the ground beef and season with salt and pepper. Press the beef into an even layer with a spatula and cook undisturbed until browned on the bottom, 3-4 minutes. Then break the meat into pieces and continue cooking until no longer pink, 2-4 minutes more. If there is excess grease, carefully pour it out.
  4. While the beef cooks, place the green beans in a medium microwave-safe bowl with a splash of water. Cover with plastic wrap and microwave until tender, 1-2 minutes. Alternatively, steam the green beans in a small pot with a splash of water until just tender, 5-7 minutes. Drain any excess water.
  5. To the pan with the beef, add the cooked green beans, sweet Thai chili sauce, 2½ tablespoons sweet soy glaze, 1 tablespoon butter and ½ teaspoon sugar (for 4 servings: 5 tablespoons sweet soy glaze, 2 tablespoons butter and 1 teaspoon sugar). Cook, stirring, until the beef mixture is thoroughly coated, 1-2 minutes. Remove from heat and stir in a squeeze of lime juice to taste.
  6. Fluff the rice with a fork and stir in 1 tablespoon butter (2 tablespoons for 4 servings). Season with salt and pepper. Divide the rice between bowls and top with the stir-fry. Sprinkle with crispy fried onions and chopped cilantro. Serve with remaining lime wedges on the side.
