Instructions

  1. Preheat your oven to 400°F. Bring a pot of salted water to a boil. Dice the potatoes into 1-inch cubes. Add the potatoes to the boiling water and cook until tender, about 15-20 minutes. Drain and return to the pot.
  2. While the potatoes cook, cut the broccoli into small florets. On a baking sheet, toss the broccoli with olive oil, salt and pepper. Roast in the oven for 15-20 minutes until tender and lightly browned. Squeeze lemon juice over the broccoli before serving.
