Instructions

  1. Wash and dry all produce. Core, deseed and thinly slice the bell pepper. Trim and thinly slice the scallions, separating the white parts from the green tops. Mince the garlic. Peel and mince the ginger. Mince the chili pepper, removing ribs and seeds for less heat. In a small bowl, combine the ginger, soy sauce, 2 teaspoons white wine vinegar, 1 tablespoon water and 1 teaspoon sugar. Set aside.
  2. Pat the chicken breasts dry with paper towels and season all over with salt and pepper. Heat a large drizzle of vegetable oil in a large pan over medium-high heat. Add the chicken and cook until browned and cooked through, 5-7 minutes per side. Transfer to a cutting board and let rest. Wipe out the pan.
  3. Meanwhile, heat a drizzle of oil in a small pot over medium-high heat. Add the scallion whites and cook, stirring, until fragrant, about 1 minute. Stir in the jasmine rice, ¾ cup water and a pinch of salt. Bring to a boil, then cover and reduce heat to low. Cook until the rice is tender, about 15 minutes. Keep covered until ready to serve.
  4. Heat a drizzle of oil in the same pan used for the chicken over medium-high heat. Add the sliced bell pepper, minced garlic and a pinch of chili (add more if you like extra heat); season with salt. Cook, stirring, until the pepper is softened, 3-4 minutes.
  5. Pour the prepared sauce into the pan with the bell pepper. Cook, stirring, until the sauce slightly thickens, 1-2 minutes. Remove from heat and stir in 1 tablespoon of butter until melted and glossy.
  6. Fluff the cooked rice with a fork and stir in the remaining 1 tablespoon of butter until melted. Slice the rested chicken breasts crosswise. Divide the rice between bowls and top with the sliced chicken. Spoon the bell pepper and any remaining sauce over the chicken. Garnish with the scallion greens and remaining chili to taste.
