Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Cook jasmine rice according to package directions; keep warm.
  3. Trim green beans and toss with 1 teaspoon cooking oil and a pinch of salt. Spread on one side of the baking sheet.
  4. In a bowl, combine ground beef, panko breadcrumbs, half of the finely chopped scallions and half of the grated ginger. Season with salt and pepper. Form into 12 meatballs and place on the other side of the baking sheet.
  5. Bake for 15-18 minutes, until meatballs are cooked through and green beans are tender and slightly charred.
  6. Meanwhile, make the firecracker sauce: in a small bowl, whisk together mayonnaise, sour cream, ponzu sauce, honey, sriracha and remaining grated ginger.
  7. When meatballs are done, transfer them to a large bowl and pour the sauce over. Toss gently to coat.
  8. Serve meatballs and sauce over jasmine rice with roasted green beans. Garnish with remaining sliced scallions.
