Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Cook the jasmine rice according to package directions. Set aside.
  3. Trim the ends of the green beans and place on a separate baking sheet. Toss with 1 teaspoon cooking oil and a pinch of salt. Roast for 15-20 minutes until tender and slightly charred.
  4. In a large bowl, combine ground beef, panko breadcrumbs, half of the finely chopped scallions (reserve the rest for garnish), grated ginger, 1 teaspoon salt and 1 tablespoon water. Mix gently until just combined. Form into 1-inch meatballs.
  5. Place meatballs on the prepared baking sheet. Bake for 12-15 minutes until cooked through and browned.
  6. While meatballs bake, make the sauce: In a small bowl, whisk together mayonnaise, sour cream, sriracha, honey and ponzu sauce. Season with a pinch of salt.
  7. Once meatballs are done, let them cool slightly, then toss them in the sauce until evenly coated.
  8. To serve, divide rice among plates, top with meatballs and roasted green beans. Garnish with reserved scallions.
